Rainbow 🌈 Avocado Toast! Did you know Avocado toast was invented in Australia by Bill Granger, and as an Aussie this is our signature breakfast.

This rainbow version was inspired by @hasibread turmeric and butterfly pea sourdough bread I found at the farmers market.

Start with toasting the bread, smash avocado with fresh cilantro, salt and lemon, top with pink radish, chives, FURIKAKE and an extra squeeze lemon juice for that fresh Aussie zesty flavour!Voila 👌🏼 crunchy, tasty, zesty and super yummy!

  • 2 slices of hasi sourdough bread
  • 1 ripe avocado
  • A small handful of fresh cilantro leaves, chopped
  • Juice of 1 lemon
  • Salt and pepper to taste

    Toppings
  • 2-3 pink radishes, thinly sliced
  • Fresh chives, chopped
  • Furikake (Japanese seasoning)
  • Liquid aminos (or tamari)
  • Olive oil
  1. Toast the sourdough bread until they are crispy and golden brown.
  2. In a bowl, scoop out the flesh of the ripe avocado and roughly smash it with a fork.
  3. Add the chopped cilantro, 1/2 lemon juice, salt, and pepper to the smashed avocado. Mix well to combine.
  4. Take the toasted bread slices, add a dash of olive oil, and spread the smashed avocado mixture evenly on top of each slice.
  5. Arrange the thinly sliced pink radishes, sprinkle the chopped chives and furikake for garnish.
  6. Drizzle a small amount of liquid aminos (or soy sauce) over the toast.
  7. Finish off with a generous squeeze of lemon juice.
  8. Serve the avocado toast immediately and enjoy!

Feel free to adjust the quantities of the ingredients according to your taste preferences. You can also experiment with additional toppings or seasonings to customise your avocado toast. Enjoy your delicious and colourful creation!
